On the volcanic and sandstone hills of Irpinia, Fiano takes on a roasted-nut quality with a few years in bottle. Greco di Tufo is the sharper sibling; Fiano is broader and more savory.
Sicilian and Australian Fiano can be excellent, usually earlier-drinking.
Roast fish, nuts, poultry, and mild cheeses.
