Vermentino di Gallura (Sardinia) can be the most complete: ripe pear, Mediterranean scrub, a pleasant bitter snap on the finish. As Rolle in Provence it is a rosé blender and a quiet white. Ligurian Pigato is a cousin, oilier and more herbal.

It is a patio wine that can also handle grilled herbs and fish. Bitterness is part of the charm — do not expect Sauvignon's neon fruit.

Pesto, grilled vegetables, simply cooked fish, and olives.
