Picpoul de Pinet, from the French Mediterranean near oyster beds, is lemon, salt, and almost nothing else. That is the point.

Picpoul means 'lip-stinger.' The wines are cheap, cold, and perfect with oysters from the Thau lagoon next door. Do not cellar them. Do not overthink them.

A few growers now make skin-contact or old-vine versions with more texture. The classic is still the one you want on a Tuesday.
