Weight, then contrast

Match the weight of the wine to the weight of the food, then decide whether you want harmony or a useful argument (salt vs. sweet, fat vs. acid, spice vs. sugar).
The useful rules: acid cuts fat; tannin wants protein; chili heat is calmed by sugar and fruit, aggravated by alcohol and tannin; salt loves bubbles and off-dry whites; umami (mushrooms, aged cheese, tomatoes) loves high-acid reds. Regional pairing — what grew together — is a shortcut that works.
White with fish is a starting point, not a law. Champagne with fried chicken is a complete education. A too-big wine will erase a delicate dish; a too-small wine will vanish.
If you remember only one thing: serve the wine a little cooler than you think, and the food will meet it halfway.
