Madiran made Tannat famous and nearly undrinkable in youth. Micro-oxygenation was born here as a civilizing tool. Traditionalists still bottle wines that need ten years and a cassoulet.
Pacherenc du Vic-Bilh is the local white, dry or sweet, and a secret. If you like Cahors and young Cabernet, you are in the right department.
Cassoulet, lamb, and hard sheep cheese. Decant as if you mean it.
