Godello almost disappeared. Old vines on slate in Valdeorras brought it back. Barrel-fermented versions can sit next to white Burgundy without embarrassment; stainless bottles are lemon and mountain herbs.
If you have outgrown simple Albariño and want Spanish white with shape, this is the grape.
Roast fish, scallops, poultry, and mild cheeses.
