Northwest Spain's revival region: Mencía on steep slate, a mix of Atlantic and inland weather, and a generation of growers who treated it like Burgundy.

The 1990s brought extraction and oak; the 2010s brought whole cluster, earlier picks, and village wines. Descendientes de J. Palacios made the map famous; a dozen others now fill it in.

Godello is the white to know. Both colors want a slight chill and a pork roast.
