Chalk, cool years, Champagne's shadow

The North Downs and the South Downs sit on the same chalk as Champagne. Warming vintages made traditional-method English sparkling a serious category, not a curiosity.

Sussex, Kent, Hampshire, and a little of Essex and Cornwall. Chardonnay, Pinot Noir, and Meunier, second fermentation in bottle, and a style that often tastes more taut and citrus than Champagne of the same price.
Still wines exist and are improving. Sparkling is why the world showed up.
Oysters, fish and chips (really), and Sunday roast.
