High-acid, lemon-and-chalk whites once reserved for kir. Serious growers now bottle Aligoté that belongs next to village Chardonnay.

Bouzeron is the one Aligoté village appellation. Elsewhere it is Bourgogne Aligoté, often from older vines on sites Chardonnay did not claim. The new wave is taut, saline, and a relief from expensive white Burgundy.
It makes a better kir than it used to, and a better wine without the crème de cassis.
