Verdejo oxidizes easily, so it is often protected under inert gas and drunk young. Old-vine, barrel-fermented Rueda is a different wine: weight, fennel, and a long bitter finish that works at the table.

Do not confuse it with Sauvignon Blanc from the same appellation, though they share a citrus register.
