Castile's white-wine engine. Verdejo, sometimes with Sauvignon Blanc, grown high and dry, usually meant for the year.

Most Rueda is stainless, aromatic, and cheap in the best sense. Old-vine, barrel-fermented Verdejo is the other cellar: bitter, fennel-scented, and a food white. Sauvignon here is legal and can confuse a blind tasting.

Drink the simple bottles young. The serious ones can go a few years.
