The grape of vin jaune: oxidative, curry-and-walnut, and immortal under a veil of flor. Also bottled ouillé (topped-up) as a taut, non-oxidative white.

Vin jaune spends years under flor in a partly empty barrel, like Fino sherry without the fortification. The result is a six-hundred-year-old idea that tastes new every time: walnuts, spice, screaming acid.

Ouillé Savagnin is the modern ambassador — fresh, alpine, no veil. Both are Savagnin. Do not confuse it with Sauvignon.

Vin jaune with Comté is destiny. Ouillé with trout and walnuts.
