A tiny eastern French region of Savagnin, Poulsard, Trousseau, and Chardonnay — plus vin jaune, the oxidative white that tastes like walnuts and time.

  • walnut
  • green apple
  • red fruit
  • curry
  • salt

Ouillé (topped-up) whites are alpine and taut. Sous voile (under flor) whites, including vin jaune, are oxidative on purpose. Red Poulsard is pale as Pinot; Trousseau is darker and spicier. Crémant du Jura is a value sparkler.

Comté is the local religion. If you like Sherry and Burgundy, you will like Jura.

Vin jaune with Comté; Poulsard with trout; Trousseau with smoked meats.
