Valpolicella, twice

Fresh Valpolicella refermented on the skins left from Amarone (or Recioto). A middle weight between everyday cherry and full Amarone.

Ripasso means 're-passed.' The second ferment adds body, dried-fruit notes, and a little extra alcohol without the full Amarone price or weight. Quality depends on the base wine and how exhausted those skins were.
It is not 'baby Amarone' so much as Valpolicella with a winter coat. Drink it with pasta and a slight chill.
