Italy's volume engine and, in the hills, a source of serious wine: Valpolicella, Soave Classico, Prosecco Superiore, and Amarone.

Prosecco from Conegliano-Valdobbiadene (especially Rive and Cartizze) is a different drink from cheap tank fizz. Soave Classico from Garganega on volcanic hills can age. Amarone is appassimento taken to its rich, bitter-chocolate conclusion.
Skip the industrial Valpolicella. Pay a little more for Classico, Ripasso from a good house, or a Recioto if you want sweet.
Risotto, aged Parmesan, and — with Amarone — a winter roast or none at all, slightly cool.
