Dry Furmint is one of Europe's most exciting whites: volcanic smoke, apple, and acid that makes Riesling nod. Sweet aszú is noble rot on Furmint (and Hárslevelű), ranked in puttonyos, and among the longest-lived wines on earth.

Tokaj is not only dessert. If you only know the sweet, try a dry single-vineyard bottle.

Dry: river fish and foie. Sweet: blue cheese, foie gras, and fruit tarts.
