Chardonnay at Burgundy's northern gate, on fossil limestone, usually without new oak. The word people mean when they say they want mineral white wine.

Petit Chablis, village, Premier Cru, Grand Cru (seven of them, including Les Clos). The grand crus can take barrel; most good Chablis still tastes of steel, lemon, and cold stone. The 'flint' is often reduction as much as rock — a swirl usually tells you which.

It is the oyster wine of France's interior. Age good Premiers and Grands; drink Petit cold and soon.

Oysters, snails, river fish, and goat cheese.

Service

46–52 °F (8–11 °C). Aged Grand Cru a degree warmer in a wider glass.
