Torrontés Riojano is the serious one (the other two Torrontés grapes are lesser). Cafayate and other high-altitude Salta sites keep the perfume from turning soapy. Mendoza versions can be simpler.
It should finish dry. If it tastes sweet and cologne-like, someone picked late or left sugar. The good bottles are a gift with empanadas and Peruvian spice.
Serve cold. Drink young.
