Nero d'Avola is the workhorse; Frappato the crunch; Grillo and Catarratto the whites of the west; Carricante the white of Etna. Marsala is a fortified wine that deserves better than the cooking aisle.

Cerasuolo di Vittoria is the island's only DOCG, a blend of Nero and Frappato, and a complete food red.
