The southern recipe: Grenache for fruit and alcohol, Syrah for color and pepper, Mourvèdre for structure and game — with room for Cinsault, Counoise, and whites.

Châteauneuf, Gigondas, and Côtes du Rhône taught the world the blend. Australia (especially Barossa and McLaren Vale) and California (Paso, Santa Barbara) speak it fluently. Proportions shift: Grenache-led is silkier; Syrah-led is darker; Mourvèdre-led is wilder.

Whites in the blend (the Châteauneuf trick) add perfume. Rosé from the same grapes is a separate, paler conversation.
