Palomino Fino grown on albariza chalk is the grape of Fino and Oloroso. Unfortified table Palomino, once rare, is back: some are like coastal, slightly oxidative whites of real charm.
On its own, young and stainless, it is not a star. In a solera it is one of the world's great vehicles for terroir and time.
As Sherry: olives and jamón. As table wine: fried fish.
