Marsanne is broad and low-acid; Roussanne brings perfume and nerve. Together they are white Hermitage, Crozes, and Saint-Joseph. Australia's Victoria has old-vine Marsanne that can live for decades.
Young bottles can taste heavy. Give them air, a wider glass, and roast poultry.
Rich fish, poultry in cream, and hard cheese.
